Instant Pot Alupi or Cassava Suman
Our favorite afternoon snacks back in Iloilo. The ingredients are very cheap and easy to make.  I like alupi with a lot of young coconut.

Instant Pot Ilonggo Alupi or Cassava Suman

Equipment:
Instant Pot 6 qt
Kitchen Aid food processor
Bamboo Steamer
cheese cloth

Yield: 12 to 14 pcs. depending on the sizes (10 pieces if without coconut)
Ingredients:
  • 4 cups (710 grams) cassava, finely shredded and squeezes (3 regular size cassava) - you can also use frozen cassava
  • 6 tbsp. (90 ml) coconut milk
  • 1 ¼ cup (160 grams) brown sugar
  • 24 oz. young coconut, shredded (275 grams or 9.7 oz net after water is drained) (optional-sometimes not available in the store)
  • Banana leaves for wrapping
Instructions:
  • Combine cassava, coconut milk, sugar and young coconut. Mix well and set aside.
  • Instant Pot Alupi or Cassava Suman
  • Wash and clean banana leaves. Wilt the leaves using a stove for easy wrapping. You can also use a clothes iron if you like.
  • Place 3 tbsp.  of cassava mixture on the leaves and wrap. Adjust the amount of mixture depending on the size of your banana leaves.
  • Add 1 cup of water into the instant pot.
  • Place the rack and steamer basket. Arrange the wrapped cassava.
  • Instant Pot Alupi or Cassava Suman
  • Set the instant pot on manual mode, high pressure for 15 minutes, 15 minutes NPR.
  • Instant Pot Alupi or Cassava Suman
  • Let it cool before serving.
  • Enjoy.
  • Keep left over in the fridge and reheat in the microwave for 1 minute. 
Notes:
  • Make sure you remove most of the liquid from cassava when squeeze.
  • I only use light brown sugar which is available in my pantry. If you use a dark brown sugar, you will have a nice  dark color alupi.
  • If you use 16 oz. frozen cassava. Thaw the cassava and squeeze the liquid out very well using a cheese cloth. Add half of the ingredients. Cooking time still the same.
  • Frozen cassava is a little bit bitter compare with fresh cassava. Make sure you squeeze all the liquid.
  • I noticed that ironing the leaves comes out cleaner compare with using the stove to welt the banana leaves. I learned about ironing the leaves through mama. She iron the banana leaves when she makes Banh Chung.

  1. thanks for this.. about to make some during the instant pot. Have you tried using the steam button instead of manual mode? If so, how many minutes?

    1. I only use the steam button for no pressure like making large batch of siopao or puto lanson (20 minutes) but not on this one.
