Instant Pot Pandan Sticky Rice

Image
Mama make this all the time but not in the Instant Pot. I did a trial and error cooking in order to come out right. I tried to cook for 20 minutes HP (since it came out right with my valenciana) and the rice was not cooked. Tried it again for 40 minutes and came out just right. Pot on pot requires more time which is double compare with cooking directly in the inner pot. Arroz Caldo is a comfort food especially if you are sick or have a flu. This is my family favorite and my favorite comfort food since I was a kid. My mom always cook this for us. I learn how to cook from her. I made this Arroz Caldo in the Instant Pot several times since 2012. My kids like to eat with small meat. I usually use ground chicken instead of chicken thighs. Once in a while, I make it with chicken legs and thighs for adults. Instant Pot Ilonggo Arroz Valenciana

Image
We always make Valenciana back home especially during Fiesta and All Souls day. We usually cook it in a big pot that can accommodate at least 75 people or more. We use turmeric most of the time but sometimes we also use Royal Orange by Coca Cola to add more flavor. I tried making this in the instant pot before without measuring my ingredients. This time, I decided to measure in order to post it in my blog. I’m using a mixture of jasmine rice and glutinous rice. I also omit chicken gizzard, liver and shrimp on this one. The shrimp become rubbery if it is overcooked in the instant pot. If you like shrimp, you can add it add the end. For people that keep asking if this is legit recipe or not, this is how we cook at home. We don't use coconut milk like other places. If you want the traditional way, use a wok and banana leaves. My blog is about Instant Pot cooking. Instant Pot Ilonggo Arroz Valenciana Author: Neliza Ly Ingredients: 2 cups Jasmine Rice 1 cup glutinous ...
