Air fry Molasses Cookies

My son has iron defeciency anemia and we've been using black strap molasses for at least 5 years and it helps him a lot. No more blood transfusion or high doses of iron supplements. He takes molasses with his oats. He loves to eat cookies and molasses cookies is another way to supplement his iron. I also make biko (sweet rice) using blackstrap molasses and I will be posting that next time. Air fry Molasses Cookies Author: Neliza Ly Yield: 30 cookies Equipment: Breville Smart Oven Air Parchment paper Plastic wrap Ingredients: 2 cups (280 grams) All Purpose Flour 1 tsp. Baking soda 2 tsp. cinnamon ½ tsp. salt ¾ cup (1 ½ stick) unsalted butter, room temperature 1 cup (135 grams) Brown sugar 1 XL egg ½ cup (120 ml) Blackstrap Unsulphured Molasses ½ cup granulated sugar for rolling Instructions: In a bowl, mix unsalted butter, brown sugar and egg until creamy. Instant Pot Shrimp Stir Fry

I know you can cook this in a stove but I prefer using the Instant Pot. It save electricity compare with using the stove. Instant Pot Shrimp Stir Fry Author: Neliza Ly Equipments: Instant Pot Measuring spoon weighing scale Ingredients: Marinade: 2 tbsp. three crabs fish sauce 1 tbsp. granulated sugar ¼ tsp. whole black pepper, grind 2 cloves garlic, minced ½ shallot, minced 2 lbs. Jumbo peel-on shrimp, clean 2 cloves garlic, minced ½ shallot, minced 2 tbsp. vegetable oil Instructions: In a bowl, combine all marinade ingredients (fish sauce, sugar, pepper, garlic and shallot), mix and pour over shrimp. Marinate for 1 hour. Set the Instant Pot in a sauté mode. Heat vegetable oil. Sauté garlic and shallot for 1 minute until fragrant. Add marinated shrimp. Stir fry for 7 to 8 minutes until shrimp is cook. Garnish with green onion and pepper. Serve with steam rice. Enjoy.

Instant Pot Pandan Sticky Rice

Mama make this all the time but not in the Instant Pot. I did a trial and error cooking in order to come out right. I tried to cook for 20 minutes HP (since it came out right with my valenciana) and the rice was not cooked. Tried it again for 40 minutes and came out just right. Pot on pot requires more time which is double compare with cooking directly in the inner pot. Pancit Molo is very common in every household in Iloilo. It originates from Molo Iloilo, the place where I graduated from Nursing School. Each household have their own version. Sometimes we eat pancit molo noodles (yellow noodles) only without molo balls. Every time there’s a birthday, there’s always pancit molo in the table. I remember when I was a kid, During Flores de Mayo, there’s always Pancit Molo as a snacks for each little kids. Several years ago, we don’t have ready-made liquid broth. We use Knorr cubes and a lot of shrimp head as a broth. The shrimp head also adds orange color to the broth. For filling, we use either chicken or pork. Instant Pot Yellow Potatoes Author: Neliza Ly Ingredients: 5 medium size potatoes 1 cup cold water Instructions: Clean potatoes and poke holes all over using fork. Pour 1 cup of cold water into the Instant Pot . Place the trivet and arrange the potatoes. Set the Instant Pot to Manual Mode High Pressure for 15 minutes, 10 minutes NPR. Serve hot with unsalted butter, salt & pepper and parsley. Enjoy.

Nescafe Ice coffee with  my Instant Pot Tapioca boba pearl For Tapioca Pearl, I only 2 brands for all my dessert including the recipe for my Taro Tapioca Recipe and Ginat-an Instant Pot Tapioca Boba Pearl Author: Neliza Ly Equipment: Instant Pot Measuring cups  , Dry Measuring cups Weighing scale Ingredients: 1 cup (175 grams)   Tapioca pearl or Boba tapioca pearl   1 ½  cup water ¼ cup granulated sugar Instructions: Soak Tapioca pearl in tap water for 10 minutes then drain. Place Tapioca pearl/boba tapioca pearl, water and sugar into the instant pot. Select Manual Mode and cook at High pressure for 1 minute, 20 NPR. Let it cool at room temperature before placing in the refrigerator. Enjoy it with your ice tea, ice coffee or halo-halo dessert. Notes: I only use 2 brands of Tapioca boba pearl  - E-Fa Brand  Tapioca Pearl   and  WuFuYuan brand  . The price is almost 50% cheaper at Asian store compare with Amazon. No ice bath or rinsing.

I saw the Poolee Rice flour noodle at Asian store and decided to try it because Mama always cook with large noodles similar to this. I am satisfied with the result. I prefer this over Excellent brand rice noodle. Instant Pot Pancit Bihon or Poolee Rice Flour Noodle Author: Neliza Ly Equipment: Instant Pot Ingredients: 2 tbsp. vegetable oil 1 onion, diced 4 cloves garlic, minced 2 carrots, sliced 1/4 lettuce, sliced 1 cup sweet peas or snow peas (fresh harvest from my garden) 2 dozen jumbo shrimp 6 tbsp. maggi seasoning made in Europe or Regular Soy sauce 2 tbsp. oyster sauce 600 grams Kimbo Poolee Rice Flour Noodle or Pancit Bihon 1 cup warm water Instructions: Soak Poolee Rice Flour Noodle Rice in warm water for 10 minutes drain, add some oil, mix well and set aside Set your Instant Pot on sauté Mode. I've been busy for the past months. I apologize for not posting new recipes. This recipe is on of our favorite at home. I always make this recipe at least every 1 to 2 weeks.  1 rack of ribs is very cheap and you only need few ingredients. The marinade is similar with my tofu recipe. I hope you will like it and enjoy the food like us. Instant Pot and Air fry Ribs with ginger Author: Neliza Ly Equipment: Breville Smart Oven Air  Instant pot Duo   Ingredients: 1 rack baby back ribs, clean 3 oz. maggi seasoning 1 tbsp. vinegar [cane vinegar (datu puti) or white vinegar] 2tbsp. vegetable oil 3 cloves garlic, grated 1 tbsp. (12 grams) ginger, grated 2 tbsp. cornstarch + 2 tbsp. water Instructions: Mix maggi seasoning, vinegar, vegetable oil, garlic and ginger. Pour into ribs and marinate for at least 30 minutes. Place marinade and ½ cup water into the Instant Pot, place the trivet and ribs. Set the Instant Pot on Manual mode , High Pressure for 18 minutes

Instant Pot Stir fry Bok Choy Tips Author: Neliza Ly Ingredients: 1 package bokchoy 1 tbsp. oyster sauce 1 tbsp. maggi seasoning or soy sauce 1 tbsp. granulated sugar ½ onion, diced 2 cloves garlic, minced 2 tbsp. vegetable oil Instructions: Blanch bokchoy for 1 minute and set it aside. In a bowl, mix oyster sauce, maggi seasoning and sugar and set it aside. Set the Instant Pot on Sauté mode. Heat vegetable oil, sauté garlic and onion for 2 minutes. Add bokchoy and oyster sauce mixture and sauté for 2 to 3 minutes. Enjoy.

Breville Smart Oven Air – Airfryer Filipino Style Tortang Talong or Eggplant Omelet Author: Neliza Ly Ingredients: 3 regular size Chinese Eggplant 3 XL eggs ¼ cup whole milk  ½ tsp. salt ½ tsp. black pepper, grind ½ tsp. garlic powder ½ tsp. soy sauce 1 tsp unsalted butter, melted Instructions: In a bowl, add eggs salt, black pepper, garlic powder, soy sauce, butter and milk. Whisk until all ingredients are blended. Set it aside. Poke holes all over the eggplant using a fork. Place the eggplant inside the Breville smart Oven Air and broil Hi for 20 minutes, turn in between until the skin is burnt or airfry for 25 minutes. Let the eggplant cool down for 2 minutes. Peel the skin and gently mash using a fork to flatten the eggplant. Grease baking dish or pie pan that fit inside the Airfryer . I use 9" pie pan. I don't like to eat tofu especially making it as a soup or saute one but I'm able to eat air fried and deep fried tofu. My kids who doesn't eat tofu, said this recipe taste like chicken nuggets and I never told them it's tofu. This is a thumbs up at home. Air fried Tofu Author: Neliza Ly Ingredients: 1 lb. (16 oz) firm tofu (I use House foods brand), drain and cut into cubes 3 tbsp. maggi seasoning 1 tsp. white wine vinegar 2tsp. vegetable oil 1 clove (1 tsp.) garlic, grated 1 tsp. ginger, grated -- Potato starch 1 egg + 1 tbsp. milk or water = egg wash Panko breadcrumbs Instructions: Mix maggi seasoning, white wine vinegar, vegetable oil, garlic and ginger. Pour into tofu and marinate for at least 30 minutes. I usually marinate mine for 2 hours. Dip marinated tofu with potato starch, egg wash and panko breadcrumbs.
