Equipment: Breville Smart Oven Air Bundt pan Stand Mixer Weighing scale Measuring spoon Ingredients: ½ cup + 1/8 cup (80 grams) Cake flour 1 tbsp (14 grams) Ube powder 1 tsp (3 grams) Baking powder 1/8 tsp Salt 160 ml Coconut milk ½ cup + 1/8 cup (118 grams) Granulated sugar 1/8 cup (2 tbsp) Vegetable oil ¼ tsp Ube extract 4 Egg yolks (large eggs)  4 Egg whites (large eggs) ¼ tsp Cream of tartar Instructions: Cook coconut milk and half of sugar over medium heat. Stir constantly to dissolve the sugar. Remove from stove and set aside to cool completely. In a large bowl, mix cake flour, ube powder, baking powder and salt. Sift the mixture and set it aside. Air Fry Filipino Pandesal

  Air Fry Filipino Pandesal   Author: Neliza Ly Ingredients: Dough: 210 ml (1 cup) Warm Milk 1 large Egg 433 grams (3 1/3 cups) Bread Flour 50 grams (3 ½ tbsp) Granulated Sugar 5 grams (1 tsp) Salt 2 oz (4 tbsp) Unsalted butter, cut into small pieces 3 grams (1 tsp) Instant Dry Yeast (I use Fleischmann’s brand) Toppings: Bread Crumbs  Instructions: Place all dough ingredients in a bread maker in order.  Select dough setting. (approx.: 1 hour 30 minutes) When cycle is done, remove the dough from the pan. Divide the dough into 16 equal pieces and shape into a ball. Dip the top part into breadcrumbs. Place the dough in a pan lined with parchment paper. Cover the dough with plastic wrap and allow to rest for 20 to 30 minutes.  Remove the plastic wrap. Air fry at 330°F for 12 minutes until the top is golden brown. If you don’t have an air fryer, bake at 350°F for 15 minutes. Enjoy.

Air fryer Turon, banana Lumpia or banana springrolls

Turon is a popular Filipino snack made with Saba bananas and jackfruit, wrapped in spring roll wrapper and deep fried. Usually, we only use brown sugar. I added cinnamon powder on mine because I love the smell. You can omit the jackfruit if you don’t like it. Air fryer Turon, banana lumpia or banana springrolls Author: Neliza Ly Ingredients: 4 Ripe plantain or Saba banana, cut into 8 pieces 1 can ripe jackfruit or fresh ripe jackfruit, cut into strips ½ cup Brown sugar + 1 tbsp. cinnamon powder (I added cinnamon on this one because I love the smell). Spring roll wrapper   Instructions: Place the brown sugar- cinnamon mixture into a bowl. Roll the banana slices in the brown sugar. Place a lumpia wrapper in your working area and then place a slice of banana on the wrapper. Add 4 to 5 strips of jackfruit. I like a lot of jackfruit.   Roll the wrapper into a log. Seal with water.
