Instant Pot Filipino Leche Puto (Steamed cake with Flan)

Leche Puto or Puto Flan is a Filipino dessert. Most Filipino knows about this but there are a lot of variations. Instant Pot Filipino Leche Puto (Steamed cake with Flan) Author: Neliza Ly Things used: Silicone cupcake liner Bamboo steamer Instant Pot Duo Ingredients: Flan 2 XL egg yolks ½ can (7 oz) condensed milk ½ tbsp. lemon extract Puto (Steamed cake) ¼ cup unsalted butter, room temperature 2 egg whites ½ cup sugar 1 cup cake flour ¼ cup milk 2 tsp. baking powder 2-4 cups warm water for steaming melted butter for brushing the mold Instructions: In a bowl, combine egg yolk, condensed milk and lemon extract. Mix well and set aside. In a separate bowl, combine butter, egg whites, sugar, cake flour, milk and baking powder. Mix well and set aside.  Place 2-4 cups of warm water into your pot.  As an Ilonggo, Chicken and pork adobo with annatto/achiote is a common dish in Iloilo. There are different variations of adobo based on Region and Province. The main ingredients of adobo are soy sauce and vinegar. For vinegar, we always use freshly made coconut sap vinegar or tuba. My mom always keeps the vinegar in a big container. The vinegar taste better if you store it for several months. Instant Pot Mussels

Iloilo is an Island with abundance of sea foods and the price is affordable. In Iloilo, we call Mussels as green shells because of the color. I learn this way of cooking from my mom. Instant Pot Mussels Author: Neliza Ly Ingredients: 4 lbs. fresh mussels – Asian Store 2 tbsp. vegetable oil 1 cup chicken broth 70 grams ginger, peeled and cut into pieces 125 grams (1) plum tomato, slice 1 tsp. coarse sea salt Things used: Instant Pot Instructions: Soak Mussels in cold water for 10 minutes. Remove the dirt, sand and debeard then clean and rinse at least 3 times and set aside. Set the Instant Pot on Saute mode, More setting. Add vegetable oil, ginger and tomato and the cook for 2 minutes. Add fresh mussels, sea salt and broth. Set the Instant Pot on Manual mode, High Pressure for 3 Minutes, QR. Enjoy.

Instant Pot Mung Bean Stew or Munggo Guisado Author: Neliza Ly Ingredients: ½ cup (102 grams) mung beans, washed and rinsed 2 cups water 2 tbsp. vegetable oil 2 cloves garlic, minced ½ shallot, sliced 1 (130 grams) plum tomato, sliced 355 grams butternut squash, chopped 150 grams peeled shrimp 200 grams spinach 2 cups chicken broth 1 tsp. salt Instructions: Add Mung beans and 2 cups water in a pot. Set the Instant Pot on Manual mode, High Pressure for 10 Minutes, 10 minutes NPR. Remove the mung beans with water from the Instant pot and set aside. Set the Instant Pot on Sauté Mode. Sauté garlic, shallot and tomato for 2 minutes. Add mung beans, squash, shrimp, salt and broth. Turn off sauté mode. Set the Instant Pot on Manual Mode, High Pressure for 0 minute, QR. Add spinach and cooked for 1 minute. Enjoy.

Airfryer Blueberry and strawberrry Muffin (boxed) Things used: Silicone Cupcake pastry muffin molds Gowise 5.8 Airfryer Martha White Muffin Mix Ingredients: 1 pack blueberry muffin mix or strawberry muffin mix ½ cup milk   Instructions: Combine muffin mix and milk; mix well. Fill the muffin cups about 2/3 full.   Air fry at 370F for 12 minutes.   Enjoy.

Ginat-an is a popular afternoon snacks in Iloilo and Guimaras Province with slices of saba banana, taro or dag-may, sweet potato, ube mixed with coconut milk, colored sago pearl and glutinous rice. This is one of my favorite snacks and I usually make this at least every other week. This recipe is similar with my old one except I added ube. Instant Pot Ilonggo Chicken Sotanghon Guisado Instant Pot Ilonggo Pork Sotanghon Guisado This is one of the noodle that we eat in Iloilo. We also make pansit lomi, pansit molo(wonton soup), pansit canton(lo mein), palabok, bam-i and bihon like the one I made before. Sotanghon Guisado, Bihon Guisado and Pansit canton are always a thumbs up at home. As an Ilonggo, our noodles and adobo always have achuete or annatto. Instant Pot Ilonggo Sotanghon Guisado Author: Neliza Ly Ingredients: 2 tbsp. vegetable oil ½ Shallot, slice 3 cloves garlic, minced 150 grams carrots, slice into small pieces 100 grams shredded cabbage (1/4) 2 cups chicken broth 2 tbsp. maggi seasoning or soy sauce 450 grams pork belly or chicken thighs Annatto Oil: 2 tbsp. I love seafood. Lobster is one of them. Lobster is very tasty. Instant Pot Whole Lobster Author: Neliza Ly Ingredients: 6 lbs. (4 pcs.) fresh live lobster  3 bay leaf 1 cup chicken broth 1 tsp. coarse sea salt Instructions: Clean lobster. Add bay leaf, sea salt, broth and lobster in a pot. Set the Instant Pot on Manual mode, High Pressure for 4 Minutes, QR. Enjoy. I usually eat lobster with rice. Notes: I did not use a trivet when I cook 4 Lobster because it doesn’t fit in my 6qt IP. Cooking time based on 6 lbs live Lobster. Please adjust your time if you cook smaller amount to prevent overcooked Lobster. Lobster doesn't move when you hold them up side down.
