Instant Pot Filipino Leche Puto (Steamed cake with Flan)
Leche Puto or Puto Flan is a Filipino dessert. Most Filipino knows about this but there are a lot of variations.
Instant Pot Filipino Leche Puto (Steamed cake with Flan)

Things used:
- Silicone cupcake liner
- Bamboo steamer
- Instant Pot Duo
Flan
- 2 XL egg yolks
- ½ can (7 oz) condensed milk
- ½ tbsp. lemon extract
- ¼ cup unsalted butter, room temperature
- 2 egg whites
- ½ cup sugar
- 1 cup cake flour
- ¼ cup milk
- 2 tsp. baking powder
- 2-4 cups warm water for steaming
- melted butter for brushing the mold
- In a bowl, combine egg yolk, condensed milk and lemon extract. Mix well and set aside.
- In a separate bowl, combine butter, egg whites, sugar, cake flour, milk and baking powder. Mix well and set aside.
- Place 2-4 cups of warm water into your pot. Set the Instant Pot on steam mode, no pressure. Place a trivet then bamboo steamer. If you have a large bamboo steamer, you can place it on top of the instant pot.
- Brush molds with melted butter. Pour flan into the molds 1/3 full. You can use a sauce dispenser or pancake dispenser. Steam for 5 minutes until set but not fully cooked through.
- Pour the puto mixture over the flan mixture and steam for 15 minutes.
- Let the leche puto cool for 10 minutes before unmolding.
- Enjoy.
Notes:
- The steam is very hot when you do layering. Be careful, you might burn your finger or thumb like mine.
- Make sure the flan is not fully cooked or else the puto or steamed cake will not stick with each other.
