Instant Pot Filipino (Ilonggo) Pork Spare Ribs Adobo with annatto/achiote
As an Ilonggo, Chicken and pork adobo with annatto/achiote is a common dish in Iloilo. There are different variations of adobo based on Region and Province. The main ingredients of adobo are soy sauce and vinegar. For vinegar, we always use freshly made coconut sap vinegar or tuba. My mom always keeps the vinegar in a big container. The vinegar taste better if you store it for several months.

- 2 tbsp. vegetable oil
- 2 lbs. Pork Spare ribs, cut into pieces
- 6 cloves garlic, crushed
- 1 shallot, sliced
- 1 tbsp. whole peppercorn
- 5 bay leaves
- ½ cup rice wine vinegar or Datu Puti Cane Vinegar – coconut vinegar is much better if you have available
- ¼ cup soy sauce (Maggi seasoning or Silver swan)
- 2 tbsp. white sugar
- 1 tbsp. annatto/achiote seeds
- Set the Instant Pot on Sauté Mode.
- Add vegetable oil and annatto seeds. Sauté for 30 seconds until the red color comes out. Turn off the instant pot and discard the seeds. (Be careful, annatto oil cause staining).
- Set the Instant Pot back on Sauté Mode. Add ribs into a pot and sauté for 3 to 4 minutes to brown the meat.
- Add garlic, shallot, peppercorn, bay leaves, vinegar, soy sauce and sugar. Mix well and close the lid.
- Set the Instant Pot on Manual Mode, High Pressure for 15 minutes, 10 minutes NPR.
- Once cooking is done, release the remaining pressure. Open the lid carefully.
- Switch to Sauté mode. Mix well and let it simmer for 15 minutes until the liquid reduced.
- Serve with rice.
- Enjoy.
