This is one of the noodle that we eat in Iloilo. We also make pansit lomi, pansit molo(wonton soup), pansit canton(lo mein), palabok, bam-i and bihon like the one I made before. Sotanghon Guisado, Bihon Guisado and Pansit canton are always a thumbs up at home.
As an Ilonggo, our noodles and adobo always have achuete or annatto.
Instant Pot Ilonggo Sotanghon Guisado

Ingredients:
- 2 tbsp. vegetable oil
- ½ Shallot, slice
- 3 cloves garlic, minced
- 150 grams carrots, slice into small pieces
- 100 grams shredded cabbage (1/4)
- 2 cups chicken broth
- 2 tbsp. maggi seasoning or soy sauce
- 450 grams pork belly or chicken thighs
- Annatto Oil: 2 tbsp. Annatto seeds +1 tbsp. vegetable oil. Cook for 2 minutes until the color turn deep red. Remove and discard the seeds.
- 1 bag (8.8 oz or 250 grams) Sotanghon noodles or Vermicelli bean thread noodle
- Lime slices
- Green onions
- Season pork belly with salt. Place into the Pot, add 1 cup chicken broth. Set the Instant Pot on Manual mode, High Pressure for 12 Minutes, 15 minutes NPR. Slice into small pieces. For chicken, I use chicken thighs, 10 minutes High Pressure, 10 minutes NPR.
- Soak bean thread noodle in warm water for 5 minutes, drain and set aside.
- Place vegetables into a steamer basket. Add 1 cup of water into the pot. Set the Instant pot on Manual mode, High Pressure for 0 minute, QR. Set aside.
- Sauté garlic and shallot until brown and fragrant.
- Add pork, noodle, broth, maggi seasoning and annatto oil. Mix well.
- Set the Instant Pot on Manual mode, High Pressure for 3 Minutes, QR.
- Once cooking is done, release the pressure. Open the lid carefully.
- Add vegetables, green onion and mix.
- Serve hot with a squeeze of lime.
- Enjoy.
Note:
- I made 2 version. The white bowl has chicken on it while the plate has pork belly.
