Equipment: Breville Smart Oven Air Bundt pan Stand Mixer Weighing scale Measuring spoon Ingredients: ½ cup + 1/8 cup (80 grams) cake flour 1 tbsp. (14 grams) ube powder 1 tsp. (3 grams) baking powder 1/8 tsp. salt 160 ml coconut milk ½ cup + 1/8 cup (118 grams) granulated sugar 1/8 cup (2 tbsp.) vegetable oil ¼ tsp. ube extract 4 egg yolks (large eggs)  4 egg white (large eggs) ¼ tsp. cream of tartar Instructions: Cook coconut milk and half of sugar over medium heat. Stir constantly to dissolve the sugar. Remove from stove and set aside to cool completely. In a large bowl, mix cake flour, ube powder, baking powder and salt. Sift the mixture and set it aside. One of my kids favorite soup. My kids request this soup every week. My kids love to eat our homegrown bokchoy. Instant Pot Chicken Soup or Nilagang Manok Author: Neliza Ly Equipment: Instant Pot Measuring spoon Measuring cup Weighing scale Ingredients: 2 tbsp. vegetable oil 6 pieces Chicken thighs or Chicken legs 6 cups water 2 cloves garlic, minced 1 regular onion, diced 3 thumbs ginger, sliced 1 chicken Knorr bouillon 2 tbsp. fish sauce (I use three crabs brand)  ½ tsp. black pepper 2 potatoes, peeled and cut into quarter or 1 small green papaya  bokchoy or pepper leaves Instructions: Set the Instant Pot on sauté mode. Sauté garlic, onion and ginger for 2 minutes until fragrant. Add chicken and sauté for a few minutes. Add water, chicken knorr, fish sauce, black pepper into the Instant Pot. Set the Instant Pot on Manual Mode, High Pressure for 8 minutes, 15 minutes NPR. Open the lid. Set the Instant Pot on sauté mode. Add potato. Simmer until te

  Air fry Filipino Pandesal   Author: Neliza Ly Ingredients: Dough: 210 ml (1 cup)warm Milk 1 large egg 433 grams (3 1/3 cups) Bread Flour 50 grams (3 ½ tbsp.) Granulated Sugar 5 grams (1 tsp.) salt 2 oz. (4 tbsp.) Unsalted butter, cut into small pieces 3 grams (1 tsp.) Instant Dry Yeast (I use Fleischmann’s brand) Toppings: Bread Crumbs  Instructions: Place all dough ingredients in a bread maker in order.  Select dough setting. (approx.: 1 hour 30 minutes) When cycle is done, remove the dough from the pan. Divide the dough into 16 equal pieces and shape into a ball. Dip the top part into a breadcrumbs. Place the dough in a pan lined with parchment paper. Cover the dough with plastic wrap and allow to rest for 20 to 30 minutes. Remove the plastic wrap.  Air fry at 330F for 12 minutes until the top looks brown. If you don’t have an air fryer, bake at 350F for 15 minutes. Enjoy.

Air fry Chicken legs with lemongrass Author: Neliza Ly Equipment: Airfryer measuring spoon storage slider bag parchment paper Ingredients: 6 pieces chicken legs 1 tsp. minced garlic 1 tbsp. lemongrass, minced 2 tbsp. brown sugar 3 tbsp. maggi seasoning ½ tsp. black pepper 2 tbsp. green onion or scallion 1 tbsp. oil Instructions: Combine all the marinade ingredients. Place chicken into a large slider bag . Pour the marinade over chicken and toss evenly. Marinate overnight in the refrigerator. Line pan with parchment paper. Air fry at 400 F for 35 - 40 minutes. Enjoy.
