Breville Smart Oven Air – Airfryer Filipino Style Tortang Talong or Eggplant Omelet

Ingredients:
  • 3 regular size Chinese Eggplant
  • 3 XL eggs
  • ¼ cup whole milk 
  • ½ tsp. salt
  • ½ tsp. black pepper, grind
  • ½ tsp. garlic powder
  • ½ tsp. soy sauce
  • 1 tsp unsalted butter, melted
Instructions:
  • In a bowl, add eggs salt, black pepper, garlic powder, soy sauce, butter and milk. Whisk until all ingredients are blended. Set it aside.
  • Poke holes all over the eggplant using a fork. Place the eggplant inside the Breville smart Oven Air and broil Hi for 20 minutes, turn in between until the skin is burnt or airfry for 25 minutes.
  • Let the eggplant cool down for 2 minutes. Peel the skin and gently mash using a fork to flatten the eggplant.
  • Grease baking dish or pie pan that fit inside the Airfryer. I use 9" pie pan. Place the eggplant inside the pie pan and pour the egg mixture on top.
  • Set the Breville Smart Oven Air to Air fry setting. Air fry Eggplant Omelet at 400 F for 20 minutes.
  • Enjoy.
Notes:
  • Tortang Talong usually done by grilling the eggplant and then fried it with lots of oil.
  • For deep fried Tortang Talong, we use fresh garlic and no milk.
  • Since I’m using the Airfryer, I need to make changes with my ingredients in order for the eggplant to come out great.
