Breville Smart Oven Air – Airfryer Filipino Style Tortang Talong or Eggplant Omelet Author: Neliza Ly Ingredients: 3 regular size Chinese Eggplant 3 XL eggs ¼ cup whole milk  ½ tsp. salt ½ tsp. black pepper, grind ½ tsp. garlic powder ½ tsp. soy sauce 1 tsp unsalted butter, melted Instructions: In a bowl, add eggs salt, black pepper, garlic powder, soy sauce, butter and milk. Whisk until all ingredients are blended. Set it aside. Poke holes all over the eggplant using a fork. Place the eggplant inside the Breville smart Oven Air and broil Hi for 20 minutes, turn in between until the skin is burnt or airfry for 25 minutes. Let the eggplant cool down for 2 minutes. Peel the skin and gently mash using a fork to flatten the eggplant. Grease baking dish or pie pan that fit inside the Airfryer . I use 9" pie pan. I usually make this roasted pork belly every other week. I tried boiling and steaming. Steaming retains more flavor than boiling. This is my favorite since I was a kid. My family loves the flavor and doesn't want me to make any changes on my recipe.
