Here's one of the reasons why I did not post recipes in a while. I'm busy with my garden and I love to share what's blooming in my garden that pollinators love.

Breville Smart Oven Air – Airfryer Filipino Style Tortang Talong or Eggplant Omelet Author: Neliza Ly Ingredients: 3 regular size Chinese Eggplant 3 XL eggs ¼ cup whole milk  ½ tsp. salt ½ tsp. black pepper, grind ½ tsp. garlic powder ½ tsp. soy sauce 1 tsp unsalted butter, melted Instructions: In a bowl, add eggs salt, black pepper, garlic powder, soy sauce, butter and milk. Whisk until all ingredients are blended. Set it aside. Poke holes all over the eggplant using a fork. Place the eggplant inside the Breville smart Oven Air and broil Hi for 20 minutes, turn in between until the skin is burnt or airfry for 25 minutes. Let the eggplant cool down for 2 minutes. Peel the skin and gently mash using a fork to flatten the eggplant. Grease baking dish or pie pan that fit inside the Airfryer . I use 9" pie pan. Air fry Filipino Pandesal

  Air fry Filipino Pandesal   Author: Neliza Ly Ingredients: Dough: 210 ml (1 cup)warm Milk 1 large egg 433 grams (3 1/3 cups) Bread Flour 50 grams (3 ½ tbsp.) Granulated Sugar 5 grams (1 tsp.) salt 2 oz. (4 tbsp.) Unsalted butter, cut into small pieces 3 grams (1 tsp.) Instant Dry Yeast (I use Fleischmann’s brand) Toppings: Bread Crumbs  Instructions: Place all dough ingredients in a bread maker in order.  Select dough setting. (approx.: 1 hour 30 minutes) When cycle is done, remove the dough from the pan. Divide the dough into 16 equal pieces and shape into a ball. Dip the top part into a breadcrumbs. Place the dough in a pan lined with parchment paper. Cover the dough with plastic wrap and allow to rest for 20 to 30 minutes. Remove the plastic wrap.  Air fry at 330F for 12 minutes until the top looks brown. If you don’t have an air fryer, bake at 350F for 15 minutes. Enjoy.

Airfryer Blueberry and strawberrry Muffin (boxed) Things used: Silicone Cupcake pastry muffin molds Gowise 5.8 Airfryer Martha White Muffin Mix Ingredients: 1 pack blueberry muffin mix or strawberry muffin mix ½ cup milk   Instructions: Combine muffin mix and milk; mix well. Fill the muffin cups about 2/3 full.   Air fry at 370F for 12 minutes.   Enjoy.
