Instant Pot Creamy Flan
If you prefer a delicious flan that isn’t overly sweet, this recipe is for you! Unlike traditional versions made with condensed milk, this egg-custard flan delivers a silky-smooth texture and a perfectly balanced caramel flavor. It is my all-time favorite flan to make in the Instant Pot!

Ingredients
Flan:
12 oz. whole milk
½ cup (100 grams) granulated sugar
3 XL eggs
1 tsp. vanilla extract
Caramel:
¾ cup (152 grams) granulated sugar
4 tbsp. water (for cooking)
2 tbsp. water (to stop cooking)
Instructions
Make the Caramel: Place ¾ cup sugar and 4 tbsp. water into a pot. Cook on medium to high heat until golden brown (it takes about 10 minutes to achieve the desired color). Once golden brown, carefully add 2 tbsp. of water and stir the pot until the bubbling stops.
Set the Base: Pour or scoop the caramelized sugar into your mold and set it aside.
Mix the Custard: In a bowl, combine the whole milk, ½ cup sugar, and vanilla extract. Microwave for 1 minute to dissolve the sugar.
Combine: In a separate bowl, whisk the 3 XL eggs. Add them to the milk mixture and whisk until well combined.
Strain: Strain the egg mixture twice through a sieve for a smooth texture.
Prep for Pot: Pour the mixture into your mold and cover tightly with foil.
Pressure Cook: Add 1 cup of water to the Instant Pot inner pot. Place the trivet and the flan mold inside. Set the Instant Pot to Manual / High Pressure for 15 minutes, followed by a 10-minute Natural Pressure Release (NPR). (Note: If your mold is made of thick glass, cook for 22 minutes with a 15-minute NPR).
Cool & Chill: Carefully remove the mold from the Instant Pot and remove the foil. Let it cool completely on the counter, then place it in the refrigerator for at least 4 hours or overnight.
Serve: Run a knife around the inside edges, place a plate over the top of the mold, and flip it over. The flan should slide out easily onto the plate. Enjoy!
