Instant Pot Whole Fish

Equipment:
- Measuring spoons
- Instant Pot
- 1 whole fish (pompano or red snapper)
- 6 Pandan leaves, cut into small pieces
- 1 stalk lemongrass
- Salt (to taste)
- 3 tbsp. Maggi seasoning
- 1 tbsp. granulated sugar
- 1 tbsp. water
- ½ tsp. white cooking wine
- 1 tsp. oyster sauce
- ½ tsp. ground black pepper
- 2 cloves garlic, minced
- 1 cup water
- Clean the fish and season with salt.
- Stuff the cavity of the fish with 1 stalk of lemongrass and place inside a Pyrex bowl.
- Place the pandan leaves on top of the fish. Pandan leaves and lemon grass give a nice aroma and flavor to the fish.

- In a small bowl, mix the sauce ingredients together and pour over the fish.
- Place 1 cup of water into the Instant Pot insert. Place the trivet inside then carefully set the Pyrex bowl with the fish on top of the trivet.

- Close the lid, set the Instant Pot to Manual/High Pressure for 8 minutes, and let it perform a 10 minutes NPR.
- Serve hot and enjoy with Jasmine Rice!
- I haven’t tried cooking whole tilapia with this recipe yet.
