Instant Pot Chop Suey or Mixed Vegetables with Air fryer Crispy Noodle
This is one of my favorite things to make in the stove before and then I converted it to Instant Pot using a sauté mode only because vegetables cook very quick. I also use the air fryer in order to use less oil. I don't check the time before on how long I cook the food. I only do visual check and taste test. Since I'm posting my recipes, I ended up using a timer on how long to cook the vegetable.
Making a food blog is a little bit time consuming because I need to measure things and take step by step pictures. If I'm in a hurry, I only take pictures of the ingredients and the output and then redo the pictures whenever I cook again.
Instant Pot Chop Suey or Mixed Vegetables with Air fryer Crispy Noodle

Ingredients:
- 500 grams shrimp, peeled
- 20 grams ginger, minced
- 3 cloves garlic, minced
- 1 tsp. salt
- 1 tbsp. vegetable oil
- 1 tbsp. cornstarch
- ---
- 1 tbsp. maggi seasoning or soy sauce
- 2 ½ tbsp. oyster sauce (I use Lee Kum Kee Panda Brand)
- 1 tbsp. vegetable oil
- 1 tbsp. sugar
- ---
- 2 tbsp. vegetable oil
- 150 grams broccoli, cut into small pieces
- 250 grams cauliflower, cut into small pieces
- 150 grams baby corn
- 100 grams mushroom slices
- 320 grams (1) carrot, sliced
- 100 grams Snow peas (if available)
- ½ cup water
- 1 tbsp. cornstarch + 1 tbsp. water
- --
- Egg noodle (dried or fresh noodle if available) or Twin Marquis Hong Kong Style Pan Fried Noodle
- 2 tbsp. vegetable oil
- Season shrimp with ginger, garlic, salt vegetable oil and cornstarch. Mix well and set aside for 15 minutes.
- In a bowl, combine Maggi seasoning or soy sauce, oyster sauce, vegetable oil and sugar. Mix well and set aside.
- Set the instant pot on sauté mode. Heat 2 tbsp. vegetable oil and stir fry shrimp for 1 minute. Add broccoli, cauliflower, baby corn, mushroom, carrots, snow peas (if available), water and sauce mixture. Cook for 8 minutes. Add cornstarch mixture and mix for 1 minute to thicken the sauce.
- For dry noodle, boil noodle for 2 minutes then drain. Add 2 tbsp. vegetable oil and then toss the noodle. Air fry at 400F for 12 minutes, flip the noodle after 6 minutes. For Twin Marquis Hong Kong Style Pan Fried noodle, add cold water and air fry.
- Enjoy.
Notes:
- You can eat the mixed vegetables with either fried noodles, soft noodles, rice, mashed potatoes or anything you like.
- Air fry noodle doesn’t expand like deep fried noodle but they taste the same.
- You can add snow peas if you have available. I ran out of snow peas when I took this picture. I have some phone pictures before but the quality is not very clear.
- Air fryer noodle stay crispy in the fridge even after 3 days. My noodle usually last up to 3 days and then I make a new batch.
