Instant Pot Butternut Squash with eggs - Filipino Style

Ingredients:
  • 2 tbsp. oil
  • 380 grams butternut squash, slice into small cubes
  • 2 cloves garlic
  • 1 shallot
  • 1 plum tomato
  • 2 XL eggs, beaten and lightly season with salt
  • 1 tbsp. maggi seasoning
  • ¼ cup water
Instructions: 
  • Set the Instant pot on Sauté Mode.  When pot is hot, add vegetable oil. Then add garlic, shallot and tomato. Sauté for 2 minutes.
  • Add squash, maggi seasoning and water. Mix and turn off Sauté Mode.
  • Close lid. Set Instant Pot on Manual Mode, High Pressure for 0 minute, QR.
  • Open lid, set the Instant Pot to Sauté mode. Add eggs and mix until eggs is cooked.  Turn off Instant Pot.
  • Enjoy.
