Instant Pot Butternut Squash with eggs - Filipino Style

Ingredients:
- 2 tbsp. oil
- 380 grams butternut squash, slice into small cubes
- 2 cloves garlic
- 1 shallot
- 1 plum tomato
- 2 XL eggs, beaten and lightly season with salt
- 1 tbsp. maggi seasoning
- ¼ cup water
- Set the Instant pot on Sauté Mode. When pot is hot, add vegetable oil. Then add garlic, shallot and tomato. Sauté for 2 minutes.
- Add squash, maggi seasoning and water. Mix and turn off Sauté Mode.
- Close lid. Set Instant Pot on Manual Mode, High Pressure for 0 minute, QR.
- Open lid, set the Instant Pot to Sauté mode. Add eggs and mix until eggs is cooked. Turn off Instant Pot.
- Enjoy.
