Air fryer Rellenong Bangus or stuffed milk fish
This is one of my favorite food to make since I was a kid. When I was a young, we have a very large fish pond in the Philippines. Everytime we harvest milkfish, we usually send it to the fishing port, ship it to Manila and Cebu and save a lot for us and for our relatives.
Rellenong bangus or stuffed milk fish is one of my favorite food to make. It is a lot of work but it is yummy. My mom usually like it with pineapple, chorizo or chinese sausage and slices of hard boiled eggs. I don't add it on mine because it's difficult for me to find chorizo in my area. Pineapple is okay I noticed it easily spoil the food if you keep it for a while. We also rub the skin with flour, coat the head opening with cornstarch and deep fried. The purpose of flour is to prevent splattering of oil and to make the skin crispy.
Since I'm doing it on the air fryer, I need to cut the head and portion of the skin because it doesn't fit inside the air fryer basket and I don't rub it with flour.
Air fryer Rellenong Bangus or stuffed milk fish

Ingredients:
- 1 large milk fish
- ½ shallot, chopped
- 2 cloves garlic, minced
- ½ (90 grams) potato, chopped
- ½ (50 grams) carrots, chopped
- ¼ cup (33 grams) raisins
- ¼ cup (30 grams) frozen peas
- 1 tbsp. maggi seasoning
- 1 XL egg, beaten
- 2 tbsp. vegetable oil
- ½ cup water
- Scale fish and remove internal organs. Break the upper and lower spine. Use a mallet to soften the bones. Insert a spoon via the neck area, scrape and loosen the meat from the skin. You can pull the spine and inverse the skin slowly. Remove the remaining meat. Reverse the skin back and keep it refrigerated.
- Place the big bones and meat in a wok or pot. Sauté for 3 minutes. This is the easy way to debone the fish.
- In a wok, heat oil over a medium heat. Sauté garlic and shallot for 1 minute. Add fish meat, peas, carrots, raisins, potato, water and maggi seasoning. Cook for 7 minutes until liquid evaporates. Let it cool for a few minutes.
- In a large bowl, combine fish mixture and egg, mix well. Use a spoon to fill the fish skin with fish mixture. I cut the head part and skin portion of my fish because it doesn’t fit inside my air fryer basket.
- Suture the opening to prevent the filling from coming out.
- Spray both sides with vegetable oil.
- Air fry at 400F for 20 minutes. Flip in between.
- Enjoy.
