Airfryer Rolled Flounder stuffed with mushroom and lemon

Ingredients:
- 4 Flounder fillet
- 125 grams Mushroom slices – grind into small pieces
- 1 tbsp. breadcrumbs
- 2 tbsp. green onion
- ½ lemon – juice
- 1/3 cup mayo
- Lemon zest from 1 lemon
- 1/8 tsp. paprika
- ½ lemon – juice
- Salt and pepper
- In a small bowl, combine mushroom, bread crumbs, green onion and lemon juice. Mix well.
- In another bowl mix mayo, lemon zest, paprika and lemon juice.
- Season Flounder fillet with salt and pepper. Place fillet flat side up. Brush with mayo mixture. Spoon mushroom mixture in each fillet, spread evenly and roll each fillet like jelly roll.
- Line GoWise Air fryer basket with foil and perforated parchment paper. For Breville Smart Oven Air, line basket with parchment paper.
- Place rolled fillet inside the air fryer basket seam side down. Brush with mayo mixture.
- Air fry at 400F for 18 minutes, no flip.
- Enjoy.
