Pandan Chiffon cake is a light, fluffy, green colored sponge cake common in Asia.

Ingredients:
  • 1/2c + 1/8 c (80 grams) cake flour
  • 1 tsp (3 grams) baking powder
  • 1/8 tsp salt
  • 100 ml coconut milk
  • ¼ cup (60 ml or 2 oz.) pandan extract (produce lighter green on cake)
    (Blend and strain 35 grams or 8 pcs of pandan leaves + ¾ c (6 oz.) water. Save the remaining extract for your next recipe). You can also use 1 tsp pandan extract from a bottle if you don't have pandan leaves.
  • ½ c + 1/8 c (118 grams) white sugar
  • 1/8 c (2 tbsp.) vegetable oil
  • 4 egg yolk (I use XL eggs)
  • 4 egg white (I use XL eggs)
  • ¼ tsp cream of tartar
  •  ¼ tsp. pandan extract from a bottle (to have a nice green color)
Instructions:
  • Cook coconut milk and half of sugar over a low heat. Stir constantly to dissolve the sugar. Remove from stove and set aside to cool completely.
  • Mix cake flour, baking powder and salt. Sift the mixture.Set it aside.
  • Combine egg yolks, coconut mixture, oil and pandan extract in a bowl. Whisk until just blended. Add the mixture to the center of the flour mixture. Mix until the batter is smooth but don't over mix. Set the mixture aside.
  • Use a clean mixer to whisk the egg whites until frothy. Add cream of tartar and gradually add the remaining sugar. Beat until stiff peak.
  • Use a rubber spatula to fold 1/3 of the egg whites into the egg yolk mixture until well blended.  Fold the remaining egg whites until well blended.
  • Pour the batter into an ungreased bundt pan. Drop the pan two times and run with skewers to break some of the bubbles.
  • Set the Breville Smart Oven Air to Air fryer Mode, place the rack on level 5. Air fry at 320F for 35 minutes until golden brown. For Bake option on Breville, place the rack on level 5. Bake at 330F for 42 minutes. For Regular Oven, bake at 330F for 43 minutes.
  • Remove the cake from the air fryer  and invert the mold immediately (to prevent from collapsing). Allow to cool for at least 1 hour before unmolding the cake.
  •  To unmold, run the knife or end of spoon along the sides, hold the cake pan at a 45°.
  • Enjoy.

  1. Nel, did you bake two versions of this cake, one using "Air Fryer" Mode and one using the Breville "Bake" Mode? Because your instructions say: For Oven, bake at 330F for 43 minutes. I wanted to know if you confirmed this. Thank you!

    1. The Breville is the airfry mode 320F. The oven one is the regular GE oven. I did not try the bake mode of breville. I'll test it next time and I will make an update once I'm done testing. Thanks.

    3. I bake the Pandan Cake today with Breville bake option. 330F for 42 minutes. I just updated the instruction and added the bake mode of BSOA.
