Air fryer Blackberry Muffin
We love Muffin at home. I decided to try both All Purpose flour and cake flour and I noticed that cake flour is softer and taste better. I also tried to experiment with different temperature and time on the Air fryer to determine a better result. My kids love this blackberry muffin. I hope you guys will enjoy this recipe. Air fryer Blackberry Muffin

Airfryer:Breville Smart Oven air and GoWise 5.8
Yield: 10 Muffins
Ingredients:
- ¼ cup unsalted butter – room temperature
- 1/3 cup (143 grams) white sugar
- 1 egg
- 1 cup cake flour (substitute 1 cup AP flour – 2 tbsp. and replace with 2 tbsp. cornstarch, sift at least 6 times)
- 1 tsp baking powder
- ¼ cup milk
- ¼ tsp salt
- ½ cup blackberries, cut into pieces
- 1 tsp vanilla extract
- Mix butter, sugar and egg until creamy.
- Add flour, baking powder, salt, milk and vanilla extract and mix well. Fold with blackberries until well combined.
- Spoon batter into the cupcake liner and Air fry using Gowise 5.8 at 350F for 14 minutes. (Note: I did not preheat my Air fryer). I line my silicone mold with paper cup because my molds have several holes at the bottom which I use it for making puto lanson (steamed cassava).
- For Breville Smart Oven Air, I preheat my air fryer at 350F and airfry the muffin for 18 minutes. I use the Farberware Nonstick 12 cup muffin pan and placed it on level 5.
