Air Fryer Ga Roti - Vietnamese Roasted Chicken

I always make this Roasted Chicken for dinner. This is one of my favorite. It is very tasty. I can eat 2 leg quarter with rice. I usually double my recipe when I make this chicken. My husband loves this chicken aside from the other chicken that I also make all the time. Mama has a similar recipe but she use coco water. For the Air fryer, I try to avoid food with a lot of liquid. I will make the Instant Pot version of this next time.

Ingredients:

For marinade:
  • 2 chicken leg quarter
  • 1 tsp five spice
  • 1 clove garlic
  • 1 tbsp. shallot
  • 1 tbsp. sugar
  • 3 tbsp. Maggi seasoning
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tbsp. oil
For skin basting: Mix honey and vinegar
  • 1 tsp honey
  • 1 tsp white wine vinegar
For dipping sauce:
  • Dripping from roasted chicken
  • 1 tsp soy sauce
  • ¼ slice lemon wedge
For scallion/green onion oil:
  • 1 sprig scallion or green onion chopped
  • 1 tsp vegetable oil or dripping from roasted chicken

Instructions:
  • In a small bowl, combine all the marinade ingredients and stir until well blended.

  • Transfer chicken into a large ziploc bag. Pour the marinade over the chicken and toss to evenly coat the chicken for richer flavor. Marinate for at least 6 hours or overnight in the refrigerator.

  • Line the air fryer basket with foil. Place the chicken in the air fryer skin down.

  • Air fry at 370 F for 35 minutes without cover.

  • After 35 minutes is up, turn the chicken skin side up. Brush the skin with honey and vinegar mixture. Air fry for 5 minutes until golden brown with charred skin like bbq.

  • The foil will contain chicken dripping. Do not throw this out. Take the dripping, pour into small bowl, add soy sauce and squeeze of lemon. It is great for rice and dipping sauce.
  • To make scallion oil, place the chopped spring onion and vegetable oil or chicken dripping in a small bowl. Microwave for 30 seconds. (Scallion oil using chicken dripping taste good).
  • Serve with hot steamed rice, carrots, broccoli and some tomato slices.
  • Enjoy.
Note:
  • The Temperature and time above is based on GoWise 5.8 airfryer.
  • On my Breville Smart Oven Air, I cooked it at the same temperature but I increased the time to 45 minutes total. I was also able to cook 4 chicken leg quarters at the same time.
