Instant Pot Filipino Chicken Afritada

Ingredients:
- 4 Chicken Quarters cut into pieces or 4 pieces legs and 4 pieces thighs
- 2 tbsp. vegetable oil
- ½ onion, chopped
- 3 cloves garlic, minced
- 8 oz. or 1 cup chicken broth
- 10 oz. tomato sauce (I use tomato with garlic and onion pasta sauce)
- 1 tbsp. fish sauce
- 1 tsp. sugar
- ½ tsp. black pepper
- 3 bay leaves
- 2 potatoes peeled and quartered
- 2 carrots cut into pieces
- ½ bell pepper, sliced
- ½ cup frozen peas
- Set the Instant pot on Sauté Mode. Add oil, sauté garlic and onion then add chicken and mix for 2 minutes.
- Mix chicken broth, tomato sauce, fish sauce and sugar. Do a taste test and adjust to your liking. Add sauce mixture, black pepper, bay leaves and potatoes into the Instant Pot.
- Set the Instant Pot on Manual Mode, High Pressure for 10 minutes, 10 mins NPR.
- Open the lid. Set Instant Pot on sauté mode. Add carrots, peas and bell pepper. Cook for 3 to 5 minutes until carrots are soft to eat.
- Enjoy.
