Instant Pot Filipino Chicken Afritada

Ingredients:
  • 4 Chicken Quarters cut into pieces or 4 pieces legs and 4 pieces thighs
  • 2 tbsp. vegetable oil
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 8 oz. or 1 cup chicken broth
  • 10 oz. tomato sauce (I use tomato with garlic and onion pasta sauce)
  • 1 tbsp. fish sauce
  • 1 tsp. sugar
  •  ½ tsp. black pepper
  • 3 bay leaves
  • 2 potatoes peeled and quartered
  •  2 carrots cut into pieces
  • ½ bell pepper, sliced
  • ½ cup frozen peas
    Instructions:
    • Set the Instant pot on Sauté Mode.  Add oil, sauté garlic and onion then add chicken and mix for 2 minutes.
    • Mix chicken broth, tomato sauce, fish sauce and sugar.  Do a taste test and adjust to your liking. Add sauce mixture, black pepper, bay leaves and potatoes into the Instant Pot.
    • Set the Instant Pot on Manual Mode, High Pressure for 10 minutes, 10 mins NPR.
    • Open the lid. Set Instant Pot on sauté mode.  Add carrots, peas and bell pepper. Cook for 3 to 5 minutes until carrots are soft to eat.
    • Enjoy.
