Instant Pot Creamy Chicken Macaroni Soup or Filipino Chicken Sopas Author: Neliza Ly Ingredients: 2 tbsp. vegetable oil 1 lb. ground chicken or boneless chicken breast cut into small pieces 4 cloves garlic, minced ½ onion, chopped 3 sticks celery, chopped 2 carrots, regular size chopped 1 tsp. salt ½ tsp. black pepper, ground 7 cups (56 oz.) Chicken broth 200 grams Elbow Macaroni 1 cup whole milk 2 tbsp. All Purpose Flour Instructions: Set the Instant Pot  on Sauté Mode. When it shows hot, add vegetable oil. Sauté garlic and onion. Add ground chicken or chicken breast and sauté until brown. Add celery, carrots, salt, pepper, chicken broth and Elbow macaroni and mix well. Set the Instant Pot on Manual Mode, High Pressure for 5 minutes, Quick Release. Switch to sauté mode. Mix milk and flour and add into the soup. Cook for 3 minutes. Instant Pot Filipino Chicken Afritada Author: Neliza Ly Ingredients: 4 Chicken Quarters cut into pieces or 4 pieces legs and 4 pieces thighs 2 tbsp. vegetable oil ½ onion, chopped 3 cloves garlic, minced 8 oz. or 1 cup chicken broth 10 oz. tomato sauce (I use tomato with garlic and onion pasta sauce) 1 tbsp. fish sauce 1 tsp. sugar  ½ tsp. black pepper 3 bay leaves 2 potatoes peeled and quartered  2 carrots cut into pieces ½ bell pepper, sliced ½ cup frozen peas Instructions: Set the Instant pot on Sauté Mode.  Add oil, sauté garlic and onion then add chicken and mix for 2 minutes. Mix chicken broth, tomato sauce, fish sauce and sugar.  Do a taste test and adjust to your liking. Add sauce mixture, black pepper, bay leaves and potatoes into the Instant Pot.  Breville smart Oven Air - Airfryer Apple Strudel Author: Neliza Ly Ingredients: 2 Fuji apple - peeled, cored and sliced (at least 4 slices per quarter) 1/3 cup brown sugar, packed 2 tbsp. unsalted butter 1 tsp. cinnamon powder 1 tsp. cornstarch 6 sheets phyllo pastry (I use Athens brand) 4 tbsp. melted unsalted butter for brushing 1 tbsp. granulated sugar 1 tsp. Confectioners’ sugar Instructions: In a pan, Add butter, Fuji apple, brown sugar, cinnamon and cornstarch. Mix and cook on medium heat for 3 minutes until butter and sugar melted. Set it aside and let in cool for a few minutes. Line working area with parchment paper for easy folding. Place 1 sheet of Phyllo dough on the work surface and lightly brush with melted butter and sprinkle some granulated sugar. Repeat with the remaining sheets, stacking method. Instant Pot Mac and Cheese

This is my kids favorite mac and cheese. Sometimes I need to double my recipe because they keep asking for it. When I double my recipe, the cooking time still the same. If I double the recipe, I use 1 1/2 cup of whole milk. This mac & cheese is very creamy. If you want less creamy use only 4 oz of cheddar cheese instead of 6 oz. My kids love it especially if it just came out from the Instant Pot. If I keep the leftover in the fridge, I just reheat it for 1 minute in the microwave. Breville Smart Oven Air – Airfryer Frittata Author: Neliza Ly Ingredients: 3 XL eggs ½ cup whole milk ¼ tsp salt ¼ tsp. black pepper 1 tbsp. unsalted butter, melted 70 grams bell pepper, sautéed 70 grams mushroom slices, sautéed 6 thick bacon, cooked and crumbled 2 tbsp. green onion or scallion 2 oz. mild cheddar cheese, shredded Instructions: In a bowl, beat eggs, milk, unsalted butter, salt and pepper. Grease 9" baking dish and pour egg mixture. Sprinkle with bell pepper, mushroom, bacon cheese and green onion. Instant Pot Squid Adobo

I grow up with this squid adobo or adobo nga lukos. We usually cook this in the stove back home.  I tried this several times (more than 20 times) using the Instant Pot and never went back cooking in the stove after that. Instant Pot Squid Adobo Author: Neliza Ly Ingredients: ¼ cup Datu Puti Sugar Cane Vinegar 2 tbsp. maggi seasoning or soy sauce 1 tbsp. white sugar 1 tsp. ground pepper 4 bay leaves 2 garlic, peeled and crushed 1 shallot, sliced 15 pieces (650 grams) fresh squid, cleaned Instructions: Place all the ingredients into a pot, mix well and close the lid. Set the Instant Pot on Manual Mode, High Pressure for 7 minutes, Quick Release. Open the lid carefully. Serve with rice. Enjoy. Note: For squid, I only use fresh squid from Asian Market sold per pound. I never tried using squid from a package.

This is my Eldest son favorite pasta aside from spaghetti. This is also a hit at work everytime I cook it for potluck. Instant Pot Pasta with ham and mushroom Author: Neliza Ly Ingredients: 2 tbsp. vegetable oil 16 oz. Rotini Pasta 1 shallot, diced 2 cloves garlic, minced 16 oz, mushrooms, sliced 2 (10.5 oz.) cans cream of mushroom 3 cups water 12 oz ham, diced ¼ cup grated parmesan cheese 2 tbsp. butter 4 oz. finely shredded mild cheddar cheese 3 oz. finely shredded fiesta blend cheese Instructions: Set the Instant Pot in Sauté Mode. When it shows hot, add vegetable oil. Sauté garlic and shallot for 1 minute. Add ham and mushroom and sauté for 3 minutes. Turn off the Instant Pot. Pour the pasta, do not mix. Mix cream of mushroom and water then pour on top of the pasta. Add butter and parmesan cheese. (Do not mix) Set the Instant Pot on Manual mode, High Pressure for 5 Minutes, QR and turn off the Instant Pot. Once cooking is done, release the press...
