Instant Pot Ilonggo Chicken Adobo
As an Ilonggo, Chicken and pork adobo with annatto or achiote is a common dish in Iloilo. There are different variations of adobo based on Region and Province. The main ingredients of adobo are soy sauce and vinegar. For vinegar, we always use coconut sap vinegar or tuba. My mom always keeps the vinegar in a big container. The vinegar taste better if you store it for several months.
Rice vinegar taste comparable with coconut sap vinegar. I also like to use Datu Puti cane vinegar. For soy sauce, we usually use Silver swan in the Philippines but I prefer the taste of Maggi seasoning. We don't use onion for chicken adobo.

Ingredients:
  • 3 tbsp. annatto or achiote oil
  • 8 pcs chicken thighs
  • 6 cloves garlic, crushed
  • 1 tsp. whole peppercorn
  • 5 bay leaves
  • ½ cup datu puti cane vinegar
  • ¼ cup soy sauce (Maggi seasoning or Silver swan)
  • 2 tbsp. sugar
Instructions:
  • Set the Instant Pot on Sauté Mode. Add chicken into a pot and fry for 3-4 minutes on each side. Do it by batches if it doesn’t fit.
  • Place all the chicken back inside the pot. Add garlic, peppercorn, bay leaves, vinegar, soy sauce, sugar.
  • Set Instant Pot on Manual Mode, High Pressure for 6 minutes, 10 minutes NPR.
  • Once cooking is done, release the remaining pressure. Open the lid carefully.
  • Switch to Sauté mode. Mix well and let it simmer until most of the sauce evaporates.
  • Garnish with scallion and red chili pepper if you like.
  • Serve with rice.
  • Enjoy.
