Instant Pot Ilonggo Chicken Adobo with achiote

The main ingredients of adobo are soy sauce and vinegar. For vinegar, we always use coconut sap vinegar or tuba. My mom always keeps the vinegar in a big container. The vinegar taste better if you store it for several months. Rice vinegar taste comparable with coconut sap vinegar. I also like to use Datu Puti cane vinegar. For soy sauce, we usually use Silver swan in the Philippines but I prefer the taste of Maggi seasoning. We don't use onion for chicken adobo.
