Instant Pot Mashed Potatoes

Ingredients:
- 8 medium russet potatoes, peeled and sliced
- 4 cups water to cover potatoes
- 2 tsp. salt, divided
- 4 tbsp. unsalted butter
- ¼ tsp. black pepper
- ½ tsp. garlic powder
- ½ cup warm milk
- Place potatoes into the Instant Pot. Add 4 cups of water and 1 tsp. salt.
- Set the Instant Pot on Manual Mode, High Pressure for 8 minutes, Quick Release.
- Drain and return potatoes into the Instant Pot.
- Add the remaining 1 tsp. salt, unsalted butter, pepper, garlic powder and warm milk. Mash until smooth and creamy.
- Serve with parsley if desired.
