Bitter Melon is reach in iron and full of nutrients. This is my husband favorite. My Nanay wants all of us to eat bitter melon because it is healthy and a lot of benefits to our body.
Instant Pot Sautéed Bitter melon or ginisa nga margoso

Ingredients:
- 3 (670 grams) Ampalaya or Bitter melon
- 2 plum tomatoes cut into small pieces
- ½ shallot, chopped
- 2 eggs
- 2 tbsp. vegetable oil
- Salt
- Wash bitter melon, cut into half, remove the seeds and slice thinly. Soak with warm water and salt for 15 minutes to remove the bitterness. Rinse, squeeze and drain excess water.
- Set the Instant Pot in a sauté mode.
- Heat vegetable oil. Sauté shallot and tomatoes for 2 minutes.
- Add bitter melon and sauté for 6 minutes, season with ½ tsp salt.
- In a small bowl, beat the eggs, season with salt and pepper and add into the pot.
- Cook for 2 minutes.
- Serve with steamed rice.
