Instant Pot Ilonggo Pancit Bihon Guisado
This is my Ilonggo version of Bihon. Every part of the Philippines have their own version. In my province, we always use achiote or annatto in our food to add color like for example in cooking sotanghon guisado, pata cansi, adobo etc... I don't know anything about Tagalog pancit bihon version.
 
Instant Pot Ilonggo Pancit Bihon Guisado

Ingredients:
  • 2 tbsp. vegetable oil
  • 1 Shallot
  • 3 cloves garlic
  • 2 ½ cups (230grams) carrots
  • 2 cups (150 grams) shredded cabbage
  • ½ cup (145 grams) chayote
  • 4 cups chicken broth
  • 3 tbsp. maggi seasoning
  • 1 tbsp. oyster sauce
  • 370 grams shredded cook pork
  • 2 cups (250 grams) sweet peas
  • Annatto oil (2 tbsp. vegetable oil + 2 tbsp. annatto seeds – microwave for 30 seconds, discard the seeds)
  • 1 bag (16 oz) Excellent brand Rice sticks
  •  
Instructions:
  • Soak Rice sticks noodle using tap water for 5 minutes, cut into half then drain and set aside.
  • Blanch vegetables for 2 minutes. You can also cook for zero minute, QR.
  • Sauté garlic and shallot.
  • Add pork, maggi seasoning, oyster sauce and annatto oil and mix for 2 minutes then add broth and bihon or rice sticks and mix well.
  • Set the Instant Pot on Manual mode, High Pressure for 3 Minutes, QR.
  • Once cooking is done, release the pressure. Open the lid carefully.
  • Add vegetables and mix well.
  • Serve hot. 
Notes:
  • I tried different brand of rice sticks, the cooking time and the amount of broth are different.
  • Excellent brand white color requires more time and more liquid compare with Excellent brand yellow color. I cook it for 4 minutes and I use 4 cups of broth. I tried several testing using the excellent brand Rice sticks inorder to get the exact amount of liquid and time.
  • For Hsinchu Rice sticks 14 oz, I use 2 ½ cups broth and cook it for 3 minutes, QR.
  • We don’t like mushy vegetables. We prefer crunchy vegetables. I tried to cook for 1 minute, the carrots and peas become mushy. On this recipe, I ended up blanching the vegetables for 2 minutes and it works well.
  • This recipe will fill your 6qt Instant Pot up to the max line. If you don’t want to cook that much, cut the recipe into half or decrease the amount of vegetables.
  • For 8 oz. Excellent brand noodle, I use 2 1/4 cups broth and cook for 3 minutes, QR.
