Air Fryer Vietnamese Honeycomb Cake – Banh Bo Nuong

The ingredients measurement is based on Gowise 5.8. For Breville Smart Oven Air, I double and sometimes triple the recipe.
Ingredients:
- 100 ml coconut milk
- 1/3 cup (65 grams) sugar
- 1/8 tsp salt
- 100grams tapioca starch
- 6 grams rice flour
- 1 packet Alsa baking powder
- 2 XL eggs
- ½ tsp. vanilla extract
- 1/8 tsp. pandan paste
- 1 tbsp. melted butter
- ½ tbsp. pandan juice (blend 40 grams pandan leaves + ½ cup water. Use a mesh strainer to separate the juice) - optional
- Cook coconut milk, sugar and salt over a very low heat. Stir constantly to dissolve the sugar. Remove from stove and set aside to cool completely.
- Mix tapioca flour, rice flour and baking powder. Sift the mixture and set aside.
- Use a hand whisk and whisk the eggs slowly and sift using a strainer. Mix a little bit. Don't over beat the eggs to prevent collapse of the cake.
- Combine eggs, coconut mixture, vanilla extract and pandan extract in a bowl. Whisk until just blended.
- Brush the bundt pan with melted butter.
- Add dry mixture into wet mixture. Mix until the batter is well blended.
- Add the remaining melted butter into the batter and mix.
- Pour the batter into the bundt pan through a mesh strainer. I cover the hole with foil to prevent spilling.
- Cover the top pan with foil and poke several holes. For Breville Smart Oven Air, no need to cover with foil.
- Place the bundt pan in the basket and air fry at 350F for 30 minutes with foil. Remove the foil and air fry for another 5 minutes.
- For Breville, Place the bundt pan on level 5 and Airfry at 350F for 35 minutes.
- Carefully remove the bundt pan from the Air fryer. Invert the pan, remove the cake and let it cool on the counter for at least 15 minutes before slicing.
- Cut out a slice using a serrated knife and enjoy. Save the rest in the fridge and reheat for 30 seconds.
- I don't preheat my GoWise air fryer and I don't use the preset cake button. I set it to manual mode.
- Update: 9/27/2018: For nice green color, I add fresh pandan juice aside from the bottled pandan extract. I'll update the picture next time.
- For Breville Smart Oven Air, I double and sometimes triple the recipe and use a regular size bundt pan or tube pan. The cooking time and temperature is the same with my Gowise 5.8 airfryer. Breville Smart Oven Air needs to be preheat.

can you substitute for the sugar?
ReplyDeleteI haven't tried substituting with other sweetener before. I will ask my mom tomorrow afternoon when she visit us. She's an expert with Vietnamese cuisine. I will get back with you once I have an answer.
DeleteMy mom is here. She said, there's no other substitute for sugar. She said you can cut down the amount of sugar if you like. The sugar on my recipe is already a good proportion.
