Instant Pot Lemon-Chocolate Flan Cake
Lemon-Chocolate Flan cake is always everyone's favorite at home. It is a very tasty dessert. I hope you will try this recipe. I also made using the lemon flan with lemon cake using box cake, lemon flan with chocolate cake using my cupcake recipe.
This is based on Van Fulton IP Chocolate Flan cake with changes on milk (I don't use half half), number of eggs (I use 2 eggs for the flan), extract(I use lemon), type of caramel which I made my own and type of flour (I use cake flour). Crinkle Cut Knife
Flan Ingredients:
- 1 can condensed milk, 14 oz.
- ½ cup 1% milk (Almond milk also works great)
- 2 tbsp. cream cheese
- 2 extra large eggs
- 1 tsp lemon extract
- 4 tbsp. caramel sauce
- 1 tbsp. unsalted butter to coat the bundt pan
- ½ cup cake flour
- ¼ cup unsweetened cocoa powder
- ½ tsp. baking powder
- ¼ cup butter, melted
- ½ cup sugar
- 1 extra large egg
- ⅓ cup 1% milk
Caramel Sauce
Ingredients:
- 1 cup light brown sugar
- 4 tbsp. unsalted butter
- 1 tsp. salt
- ½ cup 1% milk
- 1 tbsp. vanilla extract
Combine all ingredients in a saucepan and simmer medium heat, whisk frequently until thickened about 5 to 7 minutes. Caramel sauce thickens more once it is cool.
- Coat the entire interior of the 7” bundt pan very well with butter.
- Add Caramel Sauce into the bottom of your bundt pan.
- Prepare the flan mixture using a blender: blend 1% milk, condensed milk, lemon extract and cream cheese until there are no cream cheese pieces floating. Add eggs and blend until the mixture looks smooth and set aside.
- Combine cake flour, cocoa powder and baking powder into a bowl, mix well and set aside.
- In a separate large bowl, add melted butter, sugar, egg and milk. Mix well. Add the dry mixture and stir until well combined.
- Pour the chocolate cake batter into the bundt pan.
- Slowly pour the flan mixture on top of the cake batter. Cover the top pan with foil.
- Place 1 Cup of water into the Instant Pot and place the trivet. Place the bundt pan and close the lid. Set the Instant Pot on Manual mode, High Pressure for 22 minutes, 15 mins NPR.
- Carefully remove the bundt pan from the Instant Pot (I use the trivet handles and tongs). Remove the foil. Let it cool on the counter for at least 30 minutes and place in the fridge for another 30 minutes.
- Place a plate on top of the pan and flip it over and the flan cake should slide out easily onto the plate.
- Cut the flan and Enjoy. Place the left over in the fridge.
