Instant Pot Mashed Potatoes

Instant Pot Mashed Potatoes Author: Neliza Ly Equipment: Instant Pot Measuring spoon Measuring cup Ingredients: 8 medium russet potatoes, peeled and sliced 4 cups water to cover potatoes 2 tsp. salt, divided 4 tbsp. unsalted butter ¼ tsp. black pepper ½ tsp. garlic powder ½ cup warm milk Instructions: Place potatoes into the Instant Pot. Add 4 cups of water and 1 tsp. salt. Set the Instant Pot on Manual Mode, High Pressure for 8 minutes, Quick Release. Drain and return potatoes into the Instant Pot. Add the remaining 1 tsp. salt, unsalted butter, pepper, garlic powder and warm milk. Mash until smooth and creamy. Serve with parsley if desired.

One of my kids favorite soup. My kids request this soup every week. My kids love to eat our homegrown bokchoy. Instant Pot Chicken Soup or Nilagang Manok Author: Neliza Ly Equipment: Instant Pot Measuring spoon Measuring cup Weighing scale Ingredients: 2 tbsp. vegetable oil 6 pieces Chicken thighs or Chicken legs 6 cups water 2 cloves garlic, minced 1 regular onion, diced 3 thumbs ginger, sliced 1 chicken Knorr bouillon 2 tbsp. fish sauce (I use three crabs brand)  ½ tsp. black pepper 2 potatoes, peeled and cut into quarter or 1 small green papaya  bokchoy or pepper leaves Instructions: Set the Instant Pot on sauté mode. Sauté garlic, onion and ginger for 2 minutes until fragrant. Add chicken and sauté for a few minutes. Add water, chicken knorr, fish sauce, black pepper into the Instant Pot. Instant Pot Baby Back Ribs

I make 2 rack of Baby Back Ribs every week per kid’s request. This is one of their favorite way of cooking ribs. Instant Pot Baby Back Ribs Author: Neliza Ly Ingredients: 1 rack baby back ribs, cut into pieces 2 oz. Maggi seasoning 1 tbsp. (12 grams) vinegar 2 tbsp. (24 grams) annatto oil 3 cloves (11 grams) garlic, minced 1 tbsp. (15 grams) fresh ginger, grated 2 oz. water Annatto Oil: In a pot, heat ½ cup vegetable oil. Add 1 tbsp. annatto seeds. Turn off and remove the pot from heat. Leave annatto seeds for 10 minutes then discard seeds. You have annatto oil. Instructions: Parboil ribs for 10 minutes to remove impurities. Rinse with cold running water. Season the ribs with Maggi seasoning, vinegar, annatto oil, garlic and ginger. Mix well and set aside for 30 minutes. Place the ribs into the Instant pot. Instant Pot Pancit Bam-I - Sauté Mode

Bam-I is very common in our area as Ilonggo / Visayas Region. All the karenderia, school cafeteria and some of the restaurants serve Bam-I. Bam-I is also common with every celebration such as birthdays, Christmas and other holidays.  We have a belief that noodles give you long life. You can add chorizo bilbao on your Bam-I if you have it in your area.  You can also add shrimp if you like. I prefer to use Sauté Mode with Bam-I because there's 2 different kinds of noodle use in this ingredients and it will not come out good and one of the noodles will become mushy if I cook it on High Pressure. I know you can cook this in a stove but I prefer using the Instant Pot. It save electricity compare with using the stove. Instant Pot Shrimp Stir Fry Author: Neliza Ly Equipments: Instant Pot Measuring spoon weighing scale Ingredients: Marinade: 2 tbsp. three crabs fish sauce 1 tbsp. granulated sugar ¼ tsp. whole black pepper, grind 2 cloves garlic, minced ½ shallot, minced 2 lbs. Jumbo peel-on shrimp, clean 2 cloves garlic, minced ½ shallot, minced 2 tbsp. vegetable oil Instructions: In a bowl, combine all marinade ingredients (fish sauce, sugar, pepper, garlic and shallot), mix and pour over shrimp. Marinate for 1 hour. Set the Instant Pot in a sauté mode. Heat vegetable oil. Sauté garlic and shallot for 1 minute until fragrant. Add marinated shrimp. Stir fry for 7 to 8 minutes until shrimp is cook. Garnish with green onion and pepper. Serve with steam rice. Enjoy.

Instant Pot Pandan Sticky Rice

Mama make this all the time but not in the Instant Pot. I did a trial and error cooking in order to come out right. I tried to cook for 20 minutes HP (since it came out right with my valenciana) and the rice was not cooked. Tried it again for 40 minutes and came out just right. Pot on pot requires more time which is double compare with cooking directly in the inner pot. Pancit Molo is very common in every household in Iloilo. It originates from Molo Iloilo, the place where I graduated from Nursing School. Each household have their own version. Sometimes we eat pancit molo noodles (yellow noodles) only without molo balls. Every time there’s a birthday, there’s always pancit molo in the table. I remember when I was a kid, During Flores de Mayo, there’s always Pancit Molo as a snacks for each little kids. Several years ago, we don’t have ready-made liquid broth. We use Knorr cubes and a lot of shrimp head as a broth. The shrimp head also adds orange color to the broth. For filling, we use either chicken or pork. Pour 1 cup of cold water into the Instant Pot . Place the trivet and arrange the potatoes. Set the Instant Pot to Manual Mode High Pressure for 15 minutes, 10 minutes NPR. Serve hot with unsalted butter, salt & pepper and parsley. Enjoy.

I saw the Poolee Rice flour noodle at Asian store and decided to try it because Mama always cook with large noodles similar to this. I am satisfied with the result. I prefer this over Excellent brand rice noodle. I've been busy for the past months. I apologize for not posting new recipes. This recipe is on of our favorite at home. I always make this recipe at least every 1 to 2 weeks.  1 rack of ribs is very cheap and you only need few ingredients. The marinade is similar with my tofu recipe. I hope you will like it and enjoy the food like us. Instant Pot Stir fry Bok Choy Tips Author: Neliza Ly Ingredients: 1 package bokchoy 1 tbsp. oyster sauce 1 tbsp. maggi seasoning or soy sauce 1 tbsp. granulated sugar ½ onion, diced 2 cloves garlic, minced 2 tbsp. vegetable oil Instructions: Blanch bokchoy for 1 minute and set it aside. In a bowl, mix oyster sauce, maggi seasoning and sugar and set it aside. Set the Instant Pot on Sauté mode. Heat vegetable oil, sauté garlic and onion for 2 minutes. Add bokchoy and oyster sauce mixture and sauté for 2 to 3 minutes. Enjoy.

Instant Pot Creamy Flan

I finally have time to separate my 2 flan recipe from last year. This is taste less sweeter compare with using the condensed milk and this is my all time favorite flan. Instant Pot Creamy Flan Author: Neliza Ly Ingredients Flan: 12 oz. whole milk 1/2 cup (100 grams) granulated sugar 3 XL eggs 1 tsp. vanilla   Caramel: 3/4 cup (152 grams) sugar 4 tbsp. water 2 tbsp. water Instructions: Place 3/4 cup sugar and 4 tbsp. water into a pot. Cook on medium to high heat until golden brown (It took me 10 minutes to achieve the color I like). Once it is golden brown, add 2 tbsp. of water and stir the pot until the bubbling stop. Pour or scoop caramelized sugar into the mold and set it aside. Mix milk, sugar and vanilla and microwave for 1 minute to dissolve the sugar. Whisk eggs and add to milk mixture. Whisk until well combined. Strain the egg mixture twice.  Pour mixture into your mold and cover with foil. Add 1 Cup of water into the Instant Pot ....

Sorry, It took me a while to published another dish. I've been busy lately and not much time to check my blog. The weather is getting warm and I'm busy with my gardening. Instant pot and Air fryer Lemon grass Pork Ribs Author: Neliza Ly Ingredients: 6 lbs. Pork Spareribs - 1 rack 2 stalk lemon grass, grind (140 grams) 4 cloves garlic 1 shallot 3 tbsp. brown sugar 4 tbsp. honey 4 tbsp. soy sauce (I use maggi seasoning) 4 tbsp. fish sauce ½ tsp. black pepper corn, grind 1 tbsp. vegetable oil Instructions: Combine all ingredients. Mix in a processor or blender. Place ribs into a large ziploc bag. Pour 2/3 of marinade and toss to evenly coat the ribs. Marinate for at least 1 to 2 hours in the refrigerator. Save 1/3 of marinade for basting. Place 1 cup water into the Instant Pot. Place the trivet  and ribs into a pot. Instant Pot Miswa with Fish Balls and Patola or Chinese Vermicelli with Fish balls and Luffa Author: Neliza Ly Ingredients: 2 tbsp. vegetable oil 1 medium size onion 4 cloves garlic 8 oz. fish balls 48 oz. chicken broth ½ tsp. black pepper, grind 1 tbsp. fish sauce 1 patola or luffa – 13 oz. 4 oz. Chinese Vermicelli or Misua ¼ cup green onion or scallion Instructions: Set the Instant Pot on Sauté Mode. Sauté garlic and onion for 2 to 3 minutes. Add Fish balls and sauté for another minute. Add Chicken broth, black pepper and fish sauce. Close the lid. Set the Instant Pot on Manual Mode, High Pressure for 3 minutes, Quick Release. Switch to sauté mode. Add luffa and Vermicelli into the soup. Cook for 2 minutes. Add scallion and mix. Enjoy.

Instant Pot Ilonggo Chicken Adobo with achiote

As an Ilonggo, Chicken and pork adobo with annatto or achiote is a common dish in Iloilo. There are different variations of adobo based on Region and Province. The main ingredients of adobo are soy sauce and vinegar. For vinegar, we always use coconut sap vinegar or tuba. My mom always keeps the vinegar in a big container. The vinegar taste better if you store it for several months. Rice vinegar taste comparable with coconut sap vinegar. I also like to use Datu Puti cane vinegar. For soy sauce, we usually use Silver swan in the Philippines but I prefer the taste of Maggi seasoning. We don't use onion for chicken adobo. Instant Pot Creamy Chicken Macaroni Soup or Filipino Chicken Sopas Author: Neliza Ly Ingredients: 2 tbsp. vegetable oil 1 lb. ground chicken or boneless chicken breast cut into small pieces 4 cloves garlic, minced ½ onion, chopped 3 sticks celery, chopped 2 carrots, regular size chopped 1 tsp. salt ½ tsp. black pepper, ground 7 cups (56 oz.) Chicken broth 200 grams Elbow Macaroni 1 cup whole milk 2 tbsp. All Purpose Flour Instructions: Set the Instant Pot  on Sauté Mode. When it shows hot, add vegetable oil. Sauté garlic and onion. Add ground chicken or chicken breast and sauté until brown. Add celery, carrots, salt, pepper, chicken broth and Elbow macaroni and mix well. Set the Instant Pot on Manual Mode, High Pressure for 5 minutes, Quick Release. Switch to sauté mode. Mix milk and flour and add into the soup. Cook for 3 minutes. Instant Pot Filipino Chicken Afritada Author: Neliza Ly Ingredients: 4 Chicken Quarters cut into pieces or 4 pieces legs and 4 pieces thighs 2 tbsp. vegetable oil ½ onion, chopped 3 cloves garlic, minced 8 oz. or 1 cup chicken broth 10 oz. tomato sauce (I use tomato with garlic and onion pasta sauce) 1 tbsp. fish sauce 1 tsp. sugar  ½ tsp. black pepper 3 bay leaves 2 potatoes peeled and quartered  2 carrots cut into pieces ½ bell pepper, sliced ½ cup frozen peas Instructions: Set the Instant pot on Sauté Mode.  Add oil, sauté garlic and onion then add chicken and mix for 2 minutes. Instant Pot Mac and Cheese

This is my kids favorite mac and cheese. Sometimes I need to double my recipe because they keep asking for it. When I double my recipe, the cooking time still the same. If I double the recipe, I use 1 1/2 cup of whole milk. This mac & cheese is very creamy. If you want less creamy use only 4 oz of cheddar cheese instead of 6 oz. My kids love it especially if it just came out from the Instant Pot. If I keep the leftover in the fridge, I just reheat it for 1 minute in the microwave. Instant Pot Squid Adobo

I grow up with this squid adobo or adobo nga lukos. We usually cook this in the stove back home.  I tried this several times (more than 20 times) using the Instant Pot and never went back cooking in the stove after that. Instant Pot Squid Adobo Author: Neliza Ly Ingredients: ¼ cup Datu Puti Sugar Cane Vinegar 2 tbsp. maggi seasoning or soy sauce 1 tbsp. white sugar 1 tsp. ground pepper 4 bay leaves 2 garlic, peeled and crushed 1 shallot, sliced 15 pieces (650 grams) fresh squid, cleaned Instructions: Place all the ingredients into a pot, mix well and close the lid. Set the Instant Pot on Manual Mode, High Pressure for 7 minutes, Quick Release. Open the lid carefully. Serve with rice. Enjoy. Note: For squid, I only use fresh squid from Asian Market sold per pound. I never tried using squid from a package.
