Instant Pot Squid Adobo
I grow up with this squid adobo or adobo nga lukos. We usually cook this in the stove back home.  I tried this several times (more than 20 times) using the Instant Pot and never went back cooking in the stove after that.

Instant Pot Squid Adobo

Ingredients:
  • ¼ cup Datu Puti Sugar Cane Vinegar
  • 2 tbsp. maggi seasoning or soy sauce
  • 1 tbsp. white sugar
  • 1 tsp. ground pepper
  • 4 bay leaves
  • 2 garlic, peeled and crushed
  • 1 shallot, sliced
  • 15 pieces (650 grams) fresh squid, cleaned
  • Instant Pot Squid Adobo

Instructions:
  • Place all the ingredients into a pot, mix well and close the lid.
  • Instant Pot Squid Adobo
  • Set the Instant Pot on Manual Mode, High Pressure for 7 minutes, Quick Release.
  • Open the lid carefully.
  • Serve with rice.
  • Enjoy.
Note:
For squid, I only use fresh squid from Asian Market sold per pound. I never tried using squid from a package.
