Instant Pot Lemon Flan or Leche Flan
I made different version of leche flan. This time I’m using lemon juice instead of lemon extract. This flan is tasty and not very sweet. I’ll post Pandan flan next time.

Crinkle Cut Knife
Ingredients:
- 1 Can Condensed Milk, 14 oz.
- ½ Cup 1% milk (I tried Almond milk, 2% milk and coconut milk)
- 2 tbsp. Cream Cheese
- 2 eggs
- Lemon zest from 1 lemon
- 1 tsp lemon juice
- 3 tbsp. caramel sauce
- 1 tbsp. unsalted Butter to coat the bundt pan
Hand whisk and filter twice through a strainer. (I do a detailed instruction next time on a separate post).
- 12 oz. whole milk (microwave for 1 minute)
- 1/2 cup sugar
- 3 XL eggs
- 1 tsp. vanilla

Ingredients:
- 1 cup light brown sugar
- 4 tbsp. unsalted butter
- 1 tsp. salt
- ½ cup 1% milk
- 1 tbsp. vanilla extract
- Combine all ingredients in a saucepan and simmer medium heat, whisk frequently until thickened about 5 to 7 minutes. Caramel sauce thickens more once it is cool. Refrigerate up to 2 weeks. You can warm in the microwave for 30 seconds.
- ¾ cup sugar
- 3 tbsp. water
- 1 tbsp. water
- Coat the entire interior of the 7” bundt pan very well with butter. Discard the remaining butter.
- Pour Caramel Sauce into the bottom of your bundt pan.
- Prepare the flan mixture using a blender: blend 1% milk, Condensed Milk, lemon zest, lemon juice and cream cheese until there are no more cream cheese pieces floating. Add eggs and blend until the mixture looks smooth.
- Slowly pour the flan. Cover the top pan with foil.
- Place 1 Cup of Water into your Instant Pot and place your trivet. Carefully place the bundt pan. Set the Instant Pot on Manual mode, High Pressure for 20 Minutes, 10 mins NPR.
- Note: For 4 oz. ramiken, I do High Pressure for 6 minutes, 10 minutes NPR.
- Carefully remove the bundt pan from the Instant Pot (I use folded foil). Remove the foil.
- Let it cool on the counter for about 45 minutes.
- Place a plate on top of the pan and flip it over and the flan should slide out easily onto the plate.
- Cut the flan and Enjoy. Place the left over in the fridge.
